Ingredients
  

1 whole chicken, about 4 pounds, giblets removed

8 cups chicken broth

2 cups water

3 carrots, peeled and sliced

3 celery stalks, sliced

1 onion, diced

2 cloves garlic, minced

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

8 ounces egg noodles

Fresh parsley, chopped, for garnish

Instructions
 

Prep The Chicken

  • Start by rinsing the chicken under cold water and patting it dry with paper towels. Cut the chicken into pieces, removing excess fat if desired.

Cook The Chicken

  • In a large pot, combine the chicken pieces, chicken broth, water, carrots, celery, onion, garlic, bay leaves, thyme, salt, and pepper. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 1 hour, until the chicken is tender and cooked through.

Shred The Chicken
