Ingredients
  

2 medium-sized beetroots, peeled and diced

2 green chilli

1 teaspoon black pepper

7 cloves garlic

2 tablespoon butter

2 tablespoon fresh cream

1 cup tomato

1 cup boiled chicken boneless

1 onion, finely chopped

kosher salt as required

1 teaspoon ginger paste

water as required

1 handful coriander leaves

1 cup coconut milk

Instructions
 

  • In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until they turn translucent.
  • Add the ginger paste and chopped garlic cloves to the pot. Sauté for another minute until fragrant.
  • Add the diced beetroot and chopped green chillies to the pot. Stir well to combine with the onion and garlic mixture.
  • Pour in enough water to cover the vegetables in the pot. Bring the mixture to a simmer and cook until the beetroot is tender, about 15-20 minutes.
  • Once the beetroot is tender, add the chopped tomatoes and boiled chicken breast to the pot. Stir to combine all the ingredients.
  • Season the soup with black pepper and kosher salt according to your taste preference. Allow the soup to simmer for another 10 minutes to allow the flavors to meld together.
  • After simmering, stir in the fresh cream and coconut milk. Let the soup simmer for an additional 5 minutes.
  • Taste the soup and adjust seasoning if necessary. If you prefer a thinner consistency, you can add more water or coconut milk.
  • Once the soup is ready, remove it from the heat. Garnish with chopped coriander leaves before serving.
