Ingredients
  

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, peeled and diced

2 celery stalks, diced

1 teaspoon dried thyme

Salt and pepper to taste

4 cups chicken broth

2 cups diced cooked chicken breast

2 cups broccoli florets

1 cup milk or cream (optional)

Grated cheese for garnish (optional)

Fresh parsley for garnish (optional)

Instructions
 

Heat olive oil in a large pot over medium heat. Add diced onion and garlic, and sauté until softened and fragrant, about 5 minutes.

    Add diced carrots and celery to the pot. Cook for an additional 5 minutes, until the vegetables begin to soften.

      Stir in dried thyme, salt, and pepper to taste. Let the spices toast for a minute to release their flavors.

        Pour in chicken broth, scraping the bottom of the pot to release any browned bits. Bring the soup to a simmer.

          Once the soup is simmering, add diced chicken breast and broccoli florets. Cook for about 10-15 minutes, until the vegetables are tender and the chicken is heated through.

            If you prefer a creamier texture, stir in milk or cream at this point. Allow the soup to heat through without boiling.

              Taste and adjust seasoning as needed. Add more salt and pepper if desired.

                Ladle the soup into bowls and garnish with grated cheese and fresh parsley if desired.
