Ingredients
  

1 tablespoon olive oil

1 onion, finely chopped

2 carrots, diced

2 celery stalks, diced

2 cloves garlic, minced

1 pound chicken breast, cut into bite-sized pieces

6 cups chicken broth

1 bay leaf

1 teaspoon paprika

Salt and pepper to taste

2 potatoes, peeled and diced

1 cup frozen peas

Fresh parsley for garnish

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Cook, stirring occasionally, until the vegetables are soft and fragrant, about 5 minutes.
  • Add the diced chicken breast to the pot and cook until browned on all sides, about 5 minutes.
  • Pour in the chicken broth and add the bay leaf, paprika, salt, and pepper. Bring the soup to a simmer and let it cook for 15 minutes.
  • Add the diced potatoes to the pot and continue to simmer until they are tender, about 10 minutes.
  • Stir in the frozen peas and cook for an additional 5 minutes, or until heated through.
  • Remove the bay leaf from the soup and discard. Taste and adjust seasoning if necessary.
  • Ladle the Bulgarian Chicken Soup into bowls and garnish with fresh parsley before serving.
