Ingredients
  

  • 2 cans Campbell’s Tomato Soup
  • 1 lb boneless skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup chicken broth or water
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Step 1: Sauté The Chicken

  • Heat the olive oil in a skillet over medium heat. Add the cubed chicken and cook for about 6-8 minutes, stirring occasionally until the chicken is browned and fully cooked. Season with salt and pepper, then set aside.

Step 2: Cook The Aromatics

  • In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic, stirring until fragrant, around 1 minute.

Step 3: Combine The Ingredients

  • In a medium pot, pour in the Campbell’s Tomato Soup, chicken broth, dried basil, and oregano. Stir in the sautéed onions, garlic, and cooked chicken. Bring everything to a simmer, stirring occasionally.

Step 4: Add The Cream

  • Lower the heat and slowly stir in the heavy cream. Let the soup simmer for another 5-7 minutes, allowing the flavors to meld together.

Step 5: Adjust Seasonings And Serve

  • Taste the soup and adjust the seasoning with additional salt or pepper if needed. Once ready, ladle the soup into bowls, garnish with freshly chopped parsley, and serve hot.

Notes

While this recipe uses Campbell’s Tomato Soup for convenience and flavor, you can always experiment by making your own homemade tomato soup. But when I’m short on time or just craving that nostalgic taste, Campbell’s always hits the spot.
