Instructions
Brown The Ground Beef
In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Once browned, remove any excess fat.
Sauté The Vegetables
Add the chopped onion and minced garlic to the pot with the beef. Sauté for about 2-3 minutes, until the onion becomes translucent and fragrant.
Add The Potatoes And Spices
Next, add the diced potatoes, chili powder, ground cumin, paprika, salt, and pepper to the pot. Stir everything together to coat the potatoes with the spices.
Add The Broth And Tomatoes
Pour in the beef broth and diced tomatoes (with their juices). Stir well to combine all the ingredients. Bring the mixture to a boil, then reduce the heat and simmer, covered, for about 20 minutes or until the potatoes are tender.
Add The Beans And Corn
Once the potatoes are cooked, stir in the kidney beans and corn. Let the soup simmer for another 5-7 minutes to heat through.
Serve And Garnish
Taste the soup and adjust the seasoning if needed. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
