Ingredients
  

1 tablespoon olive oil

1 onion, diced

2 carrots, peeled and sliced

2 celery stalks, sliced

2 cloves garlic, minced

6 cups chicken broth

1 bay leaf

1 teaspoon dried thyme

1 cup ditalini pasta

2 cups cooked chicken, shredded

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Sauté Aromatics

  • Heat olive oil in a large pot over medium heat. Add diced onion, sliced carrots, and celery. Sauté until vegetables are tender, about 5 minutes.

Add Garlic

  • Stir in minced garlic and cook for an additional 1 minute until fragrant.

Simmer Soup

  • Pour in chicken broth and add bay leaf and dried thyme. Bring the soup to a simmer.

Cook Pasta

  • Add ditalini pasta to the pot and cook until al dente, according to package instructions.

Add Chicken

  • Stir in cooked chicken and let the soup simmer for another 5 minutes to allow flavors to meld together.
