Ingredients
  

1 tablespoon olive oil

1 onion, diced

2 carrots, diced

2 celery stalks, diced

2 cloves garlic, minced

1 teaspoon ground turmeric

1 teaspoon ground cumin

½ teaspoon ground coriander

½ teaspoon paprika

Salt and pepper to taste

4 cups chicken broth

1 cup dried red lentils, rinsed

2 cups cooked chicken, shredded

Juice of 1 lemon

Fresh parsley for garnish

Instructions
 

Sauté Aromatics

  • Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.

Add Spices

  • Stir in minced garlic, ground turmeric, cumin, coriander, paprika, salt, and pepper. Cook for another minute until fragrant.

Simmer Soup

  • Pour in chicken broth and add rinsed red lentils. Bring to a boil, then reduce heat to low and simmer uncovered for 20-25 minutes, or until lentils are tender.

Add Chicken

  • Stir in shredded cooked chicken and lemon juice. Cook for an additional 5 minutes until heated through.

Serve

  • Ladle the golden chicken lentil soup into bowls. Garnish with fresh parsley and a sprinkle of black pepper. Serve hot and enjoy!
