1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced into rounds

2 celery stalks, sliced

1 pound boneless, skinless chicken breasts, diced

8 cups chicken broth

2 cups water

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper to taste

8 ounces egg noodles

1 cup frozen peas

1 cup black olives, sliced (for a spooky touch)

1 small red bell pepper, cut into jack-o'-lantern shapes

Instructions
 

Step 1: Sauté The Aromatics

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Step 2: Cook The Vegetables
