Ingredients
  

2 cups leftover BBQ chicken, shredded

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 bell pepper, diced

1 cup corn kernels (fresh, frozen, or canned)

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

4 cups chicken broth

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

1/4 cup BBQ sauce

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Step 1: Prepare The Vegetables

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
