Ingredients
  

  • 2 tablespoons olive oil​
  • 2 onions peeled and chopped​
  • 2 carrots peeled and chopped​
  • 2 potatoes peeled and chopped​
  • 1 marrow approximately 1.5kg, washed and chopped​
  • 2 tablespoons curry powder​
  • 500 ml vegetable stock​
  • 50 g creamed coconut​
  • Salt and pepper to taste​
  • ½ cup vegan cream optional​
  • 4 tablespoons chives chopped, for garnish​

Instructions
 

Sauté The Onions

  • Heat the olive oil in a large saucepan over medium heat. Add the chopped onions and sauté for about 5 minutes until they become soft and translucent.​

Add Root Vegetables

  • Incorporate the chopped carrots and potatoes into the saucepan. Cook for an additional 5 minutes, stirring occasionally, allowing the vegetables to begin softening.​

Introduce The Marrow

  • Add the chopped marrow to the mixture. Continue to cook for another 5 minutes, ensuring all vegetables are well combined and starting to tenderize.​

Season With Curry Powder

  • Sprinkle the curry powder over the vegetables, stirring thoroughly to ensure an even coating. This step enhances the soup's depth of flavor.​

Add Stock And Creamed Coconut

  • Pour in the vegetable stock and bring the mixture to a gentle simmer. Crumble the creamed coconut into the saucepan, stirring until it fully dissolves, imparting a subtle creaminess to the soup.​

Cook Until Tender

  • Allow the soup to simmer for approximately 10 minutes, or until all vegetables are cooked through and tender.​

Blend The Soup

  • For a smooth consistency, use a hand blender to puree the soup directly in the saucepan until it reaches your desired texture. Alternatively, for a chunkier soup, you can skip this step.​

Season And Serve
