  • 4 slices of bacon diced
  • 4 large russet potatoes peeled and diced
  • 1 medium onion finely chopped
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup whole milk or heavy cream for a richer flavor
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional garnish: chopped green onions shredded cheddar cheese, or additional crispy bacon

Instructions
 

Step 1: Cook The Bacon

  • Heat a large pot or Dutch oven over medium heat. Add the diced bacon and cook until it’s crispy. Remove the bacon with a slotted spoon and set it aside on a paper towel-lined plate. Leave about 2 tablespoons of bacon grease in the pot.

Step 2: Sauté The Vegetables

  • Add the butter to the pot with the bacon grease. Once melted, sauté the onion and celery until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Step 3: Add The Potatoes And Broth

  • Stir in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.

Step 4: Blend Or Mash (Optional)

  • For a creamy soup, use an immersion blender to partially blend the soup directly in the pot. Alternatively, transfer half the soup to a blender, blend until smooth, and return it to the pot. For a chunkier soup, simply mash some of the potatoes with a potato masher.

Step 5: Add Milk And Season

  • Stir in the milk or cream and season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through. Be careful not to boil once the milk is added.

Step 6: Serve And Garnish

  • Ladle the soup into bowls and garnish with the crispy bacon, green onions, or shredded cheese. Serve immediately and enjoy the comforting flavors.
