Ingredients
  

2 tablespoons sesame oil

1 onion, finely chopped

1 tablespoon fresh ginger, grated

4 cups chicken broth

2 cups water

2 chicken breasts, thinly sliced

2 tablespoons soy sauce

1 teaspoon sesame seeds

60 g Rice Noodles

1 1/2 cups or 225g Diced Carrots

1 1/2 cups or 110g Julienned Snow Peas

2 green onions, sliced

1 cup baby spinach

Salt and pepper to taste

Instructions
 

Prepare The Ingredients

  • Finely chop the onion.
  • Grate the fresh ginger. Thinly slice the chicken breasts. Dice the carrots and julienne the snow peas. Slice the green onions.

Cook The Aromatics

  • In a large pot, heat the sesame oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes, or until the onion becomes translucent. Stir in the grated ginger and cook for another minute until fragrant.

Add Broth And Water

  • Pour in the chicken broth and water. Bring the mixture to a boil.

Cook The Chicken

  • Add the thinly sliced chicken breasts to the boiling broth. Reduce the heat to a simmer and cook for about 10 minutes, or until the chicken is cooked through.

  • Add the rice noodles to the pot and cook according to the package instructions, usually about 3-5 minutes, until they are tender.

Add Final Ingredients

  • Stir in the sliced green onions and baby spinach. Let the spinach wilt, which should take about 1-2 minutes.
