Ingredients
  

2 pounds chicken breasts, boneless and skinless

1 onion, chopped

3 cloves garlic, minced

2 cans (each 14.5 oz) diced tomatoes

1 can (6 oz) tomato paste

3 cups chicken broth

2 teaspoons dried basil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

Fresh basil for garnish (optional)

Prepare The Ingredients

  • Start by placing the chicken breasts at the bottom of the slow cooker.

Add The Vegetables

  • Scatter the chopped onion and minced garlic over the chicken.

Mix The Tomato Base

  • In a separate bowl, combine the diced tomatoes, tomato paste, chicken broth, dried basil, salt, pepper, and oregano. Stir well to blend the ingredients.

Combine And Cook

  • Pour the tomato mixture over the chicken in the slow cooker. Set the cooker to low and let it cook for 6 hours.

Shred The Chicken

  • Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the soup, stirring well to mix.

Garnish And Serve

  • Ladle the soup into bowls and garnish with fresh basil if desired.

Notes
