Ingredients
  

2 cups diced watermelon

1 pound boneless, skinless chicken breasts

4 cups chicken broth

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon salt

1/4 cup fresh cilantro, chopped

Prepare The Chicken

  • Cut The Chicken: Dice the chicken breasts into bite-sized pieces. Season with salt and pepper.
  • Cook The Chicken: Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook until they are browned and cooked through. Remove the chicken from the pot and set it aside.

Blend The Watermelon

  • Add Broth And Watermelon: Pour the chicken broth and watermelon puree into the pot with the sautéed aromatics. Stir well to combine.
  • Season The Soup: Add soy sauce, lime juice, and a little more salt and pepper to taste.

Simmer The Soup

  • Bring To A Boil: Increase the heat to high and bring the soup to a boil.
  • Reduce Heat And Simmer: Lower the heat and let the soup simmer for about 15 minutes to allow the flavors to meld.

Final Touches

  • Add chicken: Return the cooked chicken to the pot and heat through.
